Cookbook | Homemade Vegetable Soup


In the spirit of healthy eating, I have decided to make my own soup for lunch.

For this week's edition I made vegetable soups using:

A whole onion diced 
5 spring onions
Mushrooms
2 courgettes
3 carrots
1 parsnip 
1 Swede
7 new baby potatoes
2 vegetable cubes
1 litre of water
1 herb stock
Salt & pepper
Zeal

Looking at the list, It does sound a bit over the top, however I was never planning on using the spring onion, mushrooms or potatoes, these were just extra vegetable I had in stock.

Method:

1. Chopped all the vegetables in small cubes and using some sunflower oil I browned the mushrooms and onions.


Then I added the other vegetables and left them to cook with the lid on for about 10 mins, by then the vegs were tender. 


I then added some salt and pepper and zeal which is a spice that just enhances the flavour of all food.




I then added the stock to 1 litre of boiling water and added it to the soup, and left it to boil for 10 mins.

To finish it off I removed the stock from the vegetables and blended just the vegs, using a blender. Then I mixed the blended veg with the stock and returned it to the hob for 2 minutes to mix well.


The finished product, enjoy with a bun, croutons or creme fraiche!
